Inoue Miso & Soy Sauce Co., Ltd. has been making miso using traditional methods in Naruto, Tokushima for 147 years and is introducing "Gozen Nesashi" from among its four types of miso. This rice miso, naturally brewed for more than five years in wooden barrels that have been used since the company's founding, is also known as "withering of brewing" and is characterized by the depth and richness of its long aging process. The depth of the miso can be enjoyed when it is used in miso soup, however, it is also widely used as a hidden seasoning and steak sauce. Domestically produced rice, soybeans, and salt are used as ingredients, and a deep flavor is achieved through hand-made Kouji (malt) and the natural brewing process in wooden barrels.

Recommended Serve and Use

Suitable for miso soup, stews, and gibier dishes. Adding it to various sauces will increase the richness and depth of the sauce. It can also be used for seasoning chocolate and other confectionery products.

For 140 years since its establishment in 1875, we have been making miso in Naruto City, Tokushima Prefecture for seven generations. We are committed to passing on the unique "brewing" techniques that have been handed down from generation to generation, along with wooden barrels, wooden "morobuta" and other wooden tools, to the next generation, with the hope of passing them on to the next generation.
